Description

A creamy and comforting soup inspired by classic white lasagna, featuring tender noodles, ricotta, mozzarella, and fresh spinach in a rich, flavorful broth.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 can (15 ounces) ricotta cheese
  • 1 cup heavy cream
  • 2 cups cooked lasagna noodles, broken into pieces
  • 2 cups baby spinach
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Sauté the Aromatics:
    • Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes, until softened.
    • Stir in the minced garlic, Italian seasoning, and red pepper flakes. Cook for an additional 1–2 minutes, until fragrant.
  2. Prepare the Broth:
    • Pour in the chicken broth and bring to a gentle simmer. Let it cook for 5–7 minutes to allow the flavors to meld.
  3. Add the Dairy:
    • Stir in the ricotta cheese and heavy cream, whisking until smooth and fully incorporated. Reduce the heat to low and simmer for 5 minutes.
  4. Incorporate the Noodles and Spinach:
    • Add the cooked lasagna noodles and baby spinach to the pot. Cook for another 2–3 minutes until the spinach is wilted and the soup is heated through.
    • Season with salt and black pepper to taste.
  5. Finish with Cheese:
    • Stir in the shredded mozzarella cheese until melted and creamy.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley or basil if desired. Serve warm with crusty bread or garlic toast.
