- 2 cups cooked lasagna noodles, broken into pieces
- 2 cups baby spinach
- 1 cup shredded mozzarella cheese

Instructions
- Sauté the Aromatics:
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes, until softened.
- Stir in the minced garlic, Italian seasoning, and red pepper flakes. Cook for an additional 1–2 minutes, until fragrant.
- Prepare the Broth:
- Pour in the chicken broth and bring to a gentle simmer. Let it cook for 5–7 minutes to allow the flavors to meld.
- Add the Dairy:
- Stir in the ricotta cheese and heavy cream, whisking until smooth and fully incorporated. Reduce the heat to low and simmer for 5 minutes.
- Incorporate the Noodles and Spinach:
- Add the cooked lasagna noodles and baby spinach to the pot. Cook for another 2–3 minutes until the spinach is wilted and the soup is heated through.
- Season with salt and black pepper to taste.
- Finish with Cheese:
- Stir in the shredded mozzarella cheese until melted and creamy.
- Serve:
