Instructions
- Pulse sugar cookies in a food processor until they become fine crumbs.
- Add cream cheese and blend until a dough-like consistency forms.
- Scoop out portions using a 1-inch cookie scoop or tablespoon and roll into balls (about 18 truffles).
- Freeze for 15 minutes to firm up.
- Melt red candy melts according to package instructions.
- Dip each truffle into the melted candy, letting excess drip off.
- Place back onto the parchment-lined baking sheet and immediately decorate with sprinkles before the coating sets.
- Refrigerate for 15 minutes to fully set.
- Store in an airtight container in the fridge. Let sit at room temperature for a few minutes before serving.
