Description

Strawberry Swirl Cheesecake with creamy vanilla filling, buttery graham cracker crust & homemade strawberry sauce—elegant and delicious!


Ingredients

For the Crust:

  • 1½ cups graham cracker crumbs

  • 1½ tablespoons granulated sugar

  • 5 tablespoons unsalted butter, melted

For the Strawberry Sauce:

  • 2½ cups fresh strawberries, hulled and sliced

  • ½ cup granulated sugar

For the Cheesecake Filling:

  • 24 oz cream cheese, room temperature

  • 1¼ cups granulated sugar

  • 4 large eggs

  • 2 tsp vanilla extract

  • 1 cup full-fat sour cream

  • ½ cup heavy cream


Instructions

  • Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan.

  • Mix crust ingredients, press into pan, and chill.

  • Cook strawberries with sugar, blend, and cool.

  • Beat cream cheese, sugar, vanilla, eggs, sour cream, and heavy cream.

  • Pour filling into crust, swirl in strawberry sauce.

  • Bake in a water bath for 1 hr 35 min.

  • Cool in oven 1 hr, then refrigerate at least 8 hrs.

 

  • Slice and serve chilled.

Notes

  • For best results, use room temperature ingredients.
  • Cheesecake can be made a day ahead.
  • Use a water bath to avoid cracking.
