Strawberry Swirl Cheesecake with creamy vanilla filling, buttery graham cracker crust & homemade strawberry sauce—elegant and delicious!
Ingredients
For the Crust:
1½ cups graham cracker crumbs
1½ tablespoons granulated sugar
5 tablespoons unsalted butter, melted
For the Strawberry Sauce:
2½ cups fresh strawberries, hulled and sliced
½ cup granulated sugar
For the Cheesecake Filling:
24 oz cream cheese, room temperature
1¼ cups granulated sugar
4 large eggs
2 tsp vanilla extract
1 cup full-fat sour cream
½ cup heavy cream
Instructions
Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan.
Mix crust ingredients, press into pan, and chill.
Cook strawberries with sugar, blend, and cool.
Beat cream cheese, sugar, vanilla, eggs, sour cream, and heavy cream.
Pour filling into crust, swirl in strawberry sauce.
Bake in a water bath for 1 hr 35 min.
Cool in oven 1 hr, then refrigerate at least 8 hrs.
Slice and serve chilled.
Notes
