Ingredients
Scale
- 3 cups frozen strawberries (frozen solid for the best texture; if using fresh strawberries, wash, hull, and freeze them first)
- 1/2 cup full-fat coconut milk (light coconut milk can be used, but full-fat gives the creamiest result)
- 2 tablespoons honey or maple syrup (optional, for added sweetness if the strawberries aren’t super sweet)
- 1 teaspoon fresh lemon juice (adds acidity to enhance the flavor)
Instructions
- Place the frozen strawberries, coconut milk, honey or maple syrup (if using), and lemon juice into a high-powered blender or food processor.
- Blend until smooth, scraping down the sides as needed. You may need to stop and stir a few times to ensure the mixture blends evenly.
- Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
- Serve immediately for a soft-serve texture. For a firmer texture, transfer to a freezer-safe container and freeze for 1-2 hours before serving.
