  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)

Instructions

  • In a large bowl, mix mayonnaise, sour cream, and lime juice until smooth and creamy.
  • Add corn kernels and stir to coat evenly with the sauce.
  • Mix in chili powder, smoked paprika, ground cumin, and cayenne pepper (if using) until evenly distributed.
  • Preheat a non-stick skillet over medium heat.
  • Spoon small portions of the corn mixture onto the skillet to form bite-sized rounds.
  • Cook each corn bite for 2-3 minutes per side until golden brown and crispy at the edges.
  • Remove and place on a serving plate. Garnish with chopped cilantro, crumbled queso fresco, or a sprinkle of chili powder as desired.
