- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 2 cups corn kernels (fresh, frozen, or canned)
- 1 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
Instructions
- In a large bowl, mix mayonnaise, sour cream, and lime juice until smooth and creamy.
- Add corn kernels and stir to coat evenly with the sauce.
- Mix in chili powder, smoked paprika, ground cumin, and cayenne pepper (if using) until evenly distributed.
- Preheat a non-stick skillet over medium heat.
- Spoon small portions of the corn mixture onto the skillet to form bite-sized rounds.
- Cook each corn bite for 2-3 minutes per side until golden brown and crispy at the edges.
- Remove and place on a serving plate. Garnish with chopped cilantro, crumbled queso fresco, or a sprinkle of chili powder as desired.
