For the Avocado-Tomato Salsa:

  • 1 large avocado, diced

  • ½ cup diced seeded tomatoes

  • 1 small shallot, minced

  • 1 garlic clove, minced

  • 1 jalapeño, seeded and minced

  • 1 tbsp fresh lime juice

  • ½ tsp salt

  • ¼ tsp ground cumin

  • ¼ cup chopped cilantro

For the Burritos:

  • 4 large eggs

  • ¼ tsp smoked paprika

  • ¼ tsp salt

  • ½ lb spicy sausage (e.g., chorizo or spicy Italian), casings removed

  • 1⅓ cups shredded Monterey Jack cheese

  • 4 large (10-inch) flour tortillas

  • Vegetable oil, for cooking


Instructions

  • Make Salsa: Combine all salsa ingredients in a bowl. Mix gently and set aside.

  • Whisk Eggs: Beat eggs with smoked paprika and salt.

  • Cook Sausage: In a skillet over medium-high heat, cook sausage until browned, then remove.

  • Scramble Eggs: Use sausage drippings to scramble eggs gently until moist and set.

  • Assemble Burritos: Layer salsa, sausage, eggs, and cheese onto tortillas. Fold and roll tightly.

  • Toast Burritos: Pan-toast seam-side down until golden on both sides.

 

  • Serve: Serve warm with extra salsa on the side.

Notes

  • For a milder version, omit jalapeño or use bell peppers.
  • Can be made ahead and frozen—just reheat before serving.
  • Great with hot sauce or sour cream on the side.
