Ingredients
For the Avocado-Tomato Salsa:
1 large avocado, diced
½ cup diced seeded tomatoes
1 small shallot, minced
1 garlic clove, minced
1 jalapeño, seeded and minced
1 tbsp fresh lime juice
½ tsp salt
¼ tsp ground cumin
¼ cup chopped cilantro
For the Burritos:
4 large eggs
¼ tsp smoked paprika
¼ tsp salt
½ lb spicy sausage (e.g., chorizo or spicy Italian), casings removed
1⅓ cups shredded Monterey Jack cheese
4 large (10-inch) flour tortillas
Vegetable oil, for cooking
Instructions
Make Salsa: Combine all salsa ingredients in a bowl. Mix gently and set aside.
Whisk Eggs: Beat eggs with smoked paprika and salt.
Cook Sausage: In a skillet over medium-high heat, cook sausage until browned, then remove.
Scramble Eggs: Use sausage drippings to scramble eggs gently until moist and set.
Assemble Burritos: Layer salsa, sausage, eggs, and cheese onto tortillas. Fold and roll tightly.
Toast Burritos: Pan-toast seam-side down until golden on both sides.
Serve: Serve warm with extra salsa on the side.
