  • ⅓ cup granulated sugar
  • 1 cup buttermilk

  • ¼ cup unsalted butter, melted
  • 1 cup sweet corn kernels (fresh or frozen)
  • ½ cup shredded cheddar cheese (optional)

For the Honey Butter Glaze:

  • ¼ cup unsalted butter, melted
  • 2 tablespoons honey
  • Pinch of salt

Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with paper liners.
  2. Prepare Dry Ingredients:
    In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, salt, and granulated sugar until well combined.
  3. Combine Wet Ingredients:
    In a separate bowl, mix the buttermilk, melted butter, and eggs until smooth.
  4. Mix Batter:
    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Add Corn and Cheese:
    Gently fold in the sweet corn kernels and shredded cheddar cheese (if using) to add flavor and texture.
  6. Fill Muffin Tin:
    Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full to allow room for rising.
