- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ⅓ cup granulated sugar
- 1 cup buttermilk
- 2 large eggs
- ¼ cup unsalted butter, melted
- 1 cup sweet corn kernels (fresh or frozen)
- ½ cup shredded cheddar cheese (optional)
For the Honey Butter Glaze:
- ¼ cup unsalted butter, melted
- 2 tablespoons honey
- Pinch of salt
Instructions
- Preheat Oven:
Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with paper liners. - Prepare Dry Ingredients:
In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, salt, and granulated sugar until well combined. - Combine Wet Ingredients:
In a separate bowl, mix the buttermilk, melted butter, and eggs until smooth. - Mix Batter:
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy. - Add Corn and Cheese:
Gently fold in the sweet corn kernels and shredded cheddar cheese (if using) to add flavor and texture. - Fill Muffin Tin:
Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full to allow room for rising. - Bake:

While the poppers are baking, prepare the honey butter glaze by mixing the melted butter, honey, and a pinch of salt in a small bowl until smooth. - Glaze Poppers:
Once the cornbread poppers are done baking, remove them from the oven and let them cool slightly. Drizzle or brush the warm honey butter glaze generously over each popper. - Serve:
