Soft Kinder Cookies

For the Cookies:

    • 110g unsalted butter, melted and cooled

    • 140g granulated sugar

    • 1 large egg

    • 1 tsp vanilla extract

    • 215g plain flour

    • 15g cornflour

    • 1/2 tsp bicarbonate of soda

    • 1/2 tsp baking powder

    • 1/2 tsp salt

    • 6 Kinder chocolate bars, cut into chunks

For the Kinder Buttercream Icing:

    • 150g unsalted butter, softened

    • 200g icing sugar

    • 75g Kinder chocolate, melted and cooled slightly

    • Additional Kinder chocolate pieces for decoration


Instructions

    1. Prepare the Cookie Dough
        • In a large mixing bowl, whisk together the melted butter and sugar until smooth.

        • Add the egg and vanilla extract, mixing until well combined.

        • Sift in the plain flour, cornflour, bicarbonate of soda, baking powder, and salt. Stir until a soft dough forms.

        • Gently fold in the Kinder chocolate chunks, ensuring they are evenly distributed.

    1. Shape and Bake
        • Preheat your oven to 180°C/160°C (fan). Line a baking sheet with parchment paper.

        • Scoop out 2-3 tablespoons of dough for each cookie and shape into balls. Place them on the baking sheet, leaving space between each cookie.

        • Bake for 12-14 minutes, or until the edges are set while the centers remain soft.

        • Allow the cookies to cool completely on a wire rack before adding the icing.

    1. Make the Kinder Buttercream Icing
        • In a medium bowl, beat the softened butter until light and fluffy.

        • Gradually add the icing sugar, beating until fully combined and smooth.

        • Mix in the melted Kinder chocolate until the icing is creamy and well-blended.

    1. Assemble the Cookies
        • Once the cookies are fully cooled, spread or pipe the Kinder buttercream icing on top of each one.

        • Decorate with additional Kinder chocolate pieces for an extra indulgent touch.

    1. Serve and Enjoy
        • These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
