Smoky Sausage and Veggie Skillet


Ingredients

  • 1 tablespoon olive oil

  • 12 oz smoked sausage (andouille or Cajun-style), sliced

  • 2 bell peppers, diced (any color)

  • 1 zucchini, sliced into half-moons

  • 1 cup corn kernels (fresh or frozen)

  • 1 teaspoon chili powder (optional)

  • Salt and pepper, to taste

  • Fresh cilantro, chopped (for garnish)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for about 5 minutes until browned. Remove sausage and set aside.

  • In the same skillet, sauté the bell peppers for 3 minutes until just softened.

  • Add zucchini and cook for 3–4 more minutes until tender.

  • Stir in corn and cook for 2 more minutes until heated through.

  • Return the sausage to the skillet. Season with salt, pepper, and chili powder (if using). Stir well and cook another 2 minutes.

 

  • Remove from heat, garnish with chopped cilantro, and serve warm. Great alone or over rice!

Notes

  • Easily customizable with mushrooms, squash, or green beans.
  • For extra heat, add red pepper flakes or use hot sausage.
  • Works great for meal prep—just store in an airtight container for up to 4 days.
