Smoky Sausage and Veggie Skillet
Ingredients
1 tablespoon olive oil
12 oz smoked sausage (andouille or Cajun-style), sliced
2 bell peppers, diced (any color)
1 zucchini, sliced into half-moons
1 cup corn kernels (fresh or frozen)
1 teaspoon chili powder (optional)
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)
Instructions
Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for about 5 minutes until browned. Remove sausage and set aside.
In the same skillet, sauté the bell peppers for 3 minutes until just softened.
Add zucchini and cook for 3–4 more minutes until tender.
Stir in corn and cook for 2 more minutes until heated through.
Return the sausage to the skillet. Season with salt, pepper, and chili powder (if using). Stir well and cook another 2 minutes.
Remove from heat, garnish with chopped cilantro, and serve warm. Great alone or over rice!
Notes
- Easily customizable with mushrooms, squash, or green beans.
- For extra heat, add red pepper flakes or use hot sausage.
- Works great for meal prep—just store in an airtight container for up to 4 days.
