1 pound ground beef (80/20 fat ratio)
1 teaspoon kosher salt
Freshly ground black pepper
6 (6-inch) flour tortillas
6 slices muenster or provolone cheese
Shredded lettuce
Chopped white onion
Dill pickle chips
Burger Sauce:
1/2 cup mayonnaise
1 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon mustard
2 tablespoons minced bread & butter pickles
1 tablespoon pickle brine
Freshly ground black pepper
1/4 teaspoon Worcestershire sauce
Instructions
Prepare the Burger Sauce:
- In a bowl, whisk together mayonnaise, paprika, onion powder, garlic powder, mustard, minced pickles, pickle brine, black pepper, and Worcestershire sauce until well combined.
- Refrigerate until ready to use.
Form the Beef Patties:
- Divide the ground beef into six equal portions (approximately 2.5 ounces each). Gently roll each portion into a ball without overworking the meat.
Season the Beef:
- In a small bowl, mix the kosher salt and a few cracks of freshly ground black pepper. Roll each beef ball in the seasoning mixture to coat evenly.
Cook the Smash Burger Tacos:
- Preheat a flat-top griddle or large cast-iron skillet over high heat without adding oil.
- Place each beef ball onto the hot surface. Top each with a flour tortilla.
- Using a sturdy spatula or burger press, firmly press down on the tortilla to flatten the beef underneath into a thin patty that adheres to the tortilla.
- Cook for about 1 minute, then press down again to encourage a crispy edge. Continue cooking for an additional 2-3 minutes until the beef is well-browned and crispy.
- Carefully flip each taco so the tortilla side is down. Place a slice of cheese on top of the beef. Cook for another 2-3 minutes to allow the tortilla to crisp and the cheese to melt.
Assemble the Tacos:
- Remove the tacos from the griddle. Spread a layer of the prepared burger sauce over the cheese.
- Top with shredded lettuce, chopped onion, and dill pickle chips.
- Fold the tacos and serve immediately.
