For the Honey Garlic Sauce:
- ⅓ cup honey
- 1 tablespoon garlic, minced
- ½ cup low-sodium soy sauce
- ¼ cup ketchup
- 1 teaspoon dried oregano
For the Chicken and Vegetables:
- 2 pounds bone-in, skin-on chicken thighs
- 1 pound baby red potatoes, halved if large
- 1 pound carrots, peeled and cut into chunks
- 1 cup onions, chopped
- 1 pound green beans, trimmed
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
For the Cornstarch Slurry (Optional):
- 2 teaspoons cornstarch
- 3 teaspoons water
Instructions
- In a small bowl, whisk together honey, minced garlic, soy sauce, oregano, and ketchup until well combined.
- Place the chicken thighs, baby red potatoes, carrots, and chopped onions in a 4-6 quart slow cooker.
- Pour the honey garlic sauce evenly over the chicken and vegetables.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-3½ hours, until the chicken is tender and cooked through.
- If using the cornstarch slurry, mix the cornstarch and water in a small bowl. Stir it into the slow cooker during the last 30 minutes of cooking to thicken the sauce.
- Add the trimmed green beans in the last 30 minutes of cooking to retain their crisp texture.
- Season with salt and pepper to taste and garnish with fresh parsley before serving.
