Description

Tender beef bites and golden potatoes slow-cooked in garlic butter for a melt-in-your-mouth meal. This easy one-pot recipe is perfect for any occasion!

Ingredients

Scale

Main Ingredients:

  • 2 pounds beef stew meat, cut into bite-sized chunks
  • 5 tablespoons butter, sliced
  • 1 pound baby yellow potatoes, halved or quartered
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh garlic
  • 2 teaspoons seasoned salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 teaspoon Italian seasoning (optional)
  • ½ cup beef broth
  • 1 tablespoon Worcestershire sauce

Optional Add-Ins:

  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon fresh thyme or rosemary

Instructions

  • Season the Ingredients: In a large bowl, toss the beef bites and potatoes with onion powder, garlic powder, seasoned salt, black pepper, smoked paprika, and Italian seasoning.
  • Layer the Slow Cooker: Place half of the butter slices at the bottom of the slow cooker. Add the seasoned beef bites and potatoes on top.
  • Add Flavor: Sprinkle the chopped fresh garlic over the top. Pour in the beef broth and Worcestershire sauce. Top with the remaining butter slices.
  • Slow Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is tender and the potatoes are fully cooked. Stir once or twice during cooking if possible.
  • Garnish & Serve: Before serving, garnish with fresh thyme or rosemary if desired. Enjoy warm!

Notes

  • Meat Substitutions: You can use chuck roast or sirloin instead of stew meat for extra tenderness.
  • Extra Flavor: Add a splash of soy sauce or balsamic vinegar for depth of flavor.
  • Thicker Sauce: If you want a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker 30 minutes before serving.
  • Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
