  • 2 pounds boneless, skinless chicken breasts
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 6 hoagie rolls or sub buns
  • 6 slices provolone cheese


Instructions

  1. Place the chicken breasts in the slow cooker. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Add the sliced bell peppers and onions on top of the chicken. Pour the chicken broth over everything.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and can be easily shredded.
  4. Shred the chicken directly in the slow cooker and mix it with the peppers, onions, and juices.
  5. Preheat your oven to 375°F (190°C). Open the hoagie rolls and place them on a baking sheet. Fill each roll with the chicken mixture and top with a slice of provolone cheese.
  6. Bake for 5-7 minutes, or until the cheese is melted and bubbly.
