- 2 pounds boneless, skinless chicken breasts
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 medium onion, sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 6 hoagie rolls or sub buns
- 6 slices provolone cheese
Instructions
- Place the chicken breasts in the slow cooker. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add the sliced bell peppers and onions on top of the chicken. Pour the chicken broth over everything.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and can be easily shredded.
- Shred the chicken directly in the slow cooker and mix it with the peppers, onions, and juices.
- Preheat your oven to 375°F (190°C). Open the hoagie rolls and place them on a baking sheet. Fill each roll with the chicken mixture and top with a slice of provolone cheese.
- Bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Serve hot with a side of chips, fries, or a fresh salad. Enjoy!
