- 1 lb smoked sausage (kielbasa or andouille), sliced
- ½ head of cabbage, chopped
- 3 medium potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 medium onion, chopped
- 3 cups chicken broth
- 1 tsp garlic powder
- ½ tsp smoked paprika (optional)
- ½ tsp dried thyme
- Salt and black pepper to taste
Instructions
- Sauté the Sausage:
- In a large pot, cook sausage over medium heat until browned (about 5 minutes). Remove and set aside.
- Sauté the Vegetables:
- Add onion, carrots, and potatoes to the pot. Cook for 5 minutes until onions are translucent.
- Add Cabbage and Seasonings:
- Stir in cabbage, garlic powder, smoked paprika, thyme, salt, and pepper. Cook for 5 more minutes.
- Simmer the Stew:
- Return sausage to the pot, pour in broth, and bring to a boil. Reduce heat, cover, and simmer for 25–30 minutes until vegetables are tender.
- Adjust Seasoning and Serve:
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
