For the roasted carrots:
- 1 lb carrots, peeled and trimmed
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- 1 teaspoon honey
For the whipped ricotta:
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon lemon zest
For the hot honey:
- ¼ cup honey
- ½ teaspoon red pepper flakes
- ½ teaspoon apple cider vinegar
For garnish:
- 2 tablespoons chopped fresh herbs (such as parsley or thyme)
- ¼ cup toasted nuts (such as pistachios or walnuts)
Instructions
- Roast the carrots: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss the carrots with olive oil, salt, pepper, smoked paprika, and honey.
- Spread the carrots in a single layer on the baking sheet and roast for 25–30 minutes, turning halfway through, until caramelized and tender.
- Make the whipped ricotta: Blend ricotta, heavy cream, olive oil, salt, black pepper, and lemon zest in a food processor until smooth and creamy. Set aside.
- Prepare the hot honey: In a small saucepan over low heat, warm the honey with red pepper flakes for 2–3 minutes. Remove from heat and stir in apple cider vinegar. Let it cool.
- Assemble: Spread the whipped ricotta onto a serving plate. Arrange the roasted carrots on top.
- Drizzle with hot honey and sprinkle with fresh herbs and toasted nuts.
- Serve warm and enjoy!
Notes
- Use rainbow carrots for a more colorful presentation.
- Adjust spice levels by adding more or less red pepper flakes.
