Rice Krispie Chocolate Chip Cookies – Crispy, chewy, and loaded with chocolate! A perfect treat with a delightful crunch in every bite.
Ingredients
Scale
1 cup unsalted butter, softened to room temperature
¾ cup packed brown sugar
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups semi-sweet chocolate chips
2 cups Rice Krispies cereal
Instructions
Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
Cream Butter and Sugars:
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy, approximately 2–3 minutes.
Add Eggs and Vanilla:
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
Combine Dry Ingredients:
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Avoid overmixing to ensure tender cookies.
Fold in Chocolate Chips and Rice Krispies:
- Gently fold in the semi-sweet chocolate chips and Rice Krispies cereal until evenly distributed throughout the dough. Be careful not to crush the cereal to maintain its crispy texture.
Notes
- Use Fresh Rice Krispies – For the best texture, use fresh, crispy cereal to keep the cookies light and crunchy instead of soggy.
- Don’t Overmix the Dough – Gently fold in the Rice Krispies to maintain their crunch and prevent the cookies from becoming too dense.
