  • 1 cup pineapple chunks (fresh or canned, drained)
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • ¼ teaspoon red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)
  • 1 teaspoon sesame seeds (for garnish)
  • 2 cups cooked white or brown rice

Instructions

  • Heat olive oil in a large pan over medium-high heat. Add the chicken pieces and season with salt, pepper, and garlic powder. Cook for 5-7 minutes until golden brown and cooked through.
  • Add the minced ginger and stir for 1 minute until fragrant.
  • Stir in the pineapple chunks, pineapple juice, soy sauce, honey, and rice vinegar. Bring to a gentle simmer.
  • Pour in the cornstarch slurry and stir continuously until the sauce thickens, about 2-3 minutes.
  • If using, add red pepper flakes for a hint of spice.
  • Remove from heat and serve the pineapple chicken over cooked rice.
  • Garnish with chopped green onions and sesame seeds. Enjoy!
