- 1 cup pineapple chunks (fresh or canned, drained)
- ½ cup pineapple juice
- ¼ cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- ¼ teaspoon red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
- 1 teaspoon sesame seeds (for garnish)
- 2 cups cooked white or brown rice
Instructions
- Heat olive oil in a large pan over medium-high heat. Add the chicken pieces and season with salt, pepper, and garlic powder. Cook for 5-7 minutes until golden brown and cooked through.
- Add the minced ginger and stir for 1 minute until fragrant.
- Stir in the pineapple chunks, pineapple juice, soy sauce, honey, and rice vinegar. Bring to a gentle simmer.
- Pour in the cornstarch slurry and stir continuously until the sauce thickens, about 2-3 minutes.
- If using, add red pepper flakes for a hint of spice.
- Remove from heat and serve the pineapple chicken over cooked rice.
