Ingredients
Scale
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup (250g) creamy peanut butter
- 2 cups (250g) all-purpose flour
- 2 cups (200g) old-fashioned rolled oats
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups (340g) semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract and creamy peanut butter until smooth and well blended.
- In another bowl, whisk together the all-purpose flour, rolled oats, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips evenly throughout the dough.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly underdone but will set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
