Description

  • 8 chicken thighs and drumsticks
  • pounds baby potatoes, halved
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 6 garlic cloves, pressed
  • 1 teaspoon 7 spice
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  • Preheat oven to 400°F (200°C). Pat the chicken and potatoes dry with a paper towel and place them in a 9 x 13-inch oven-safe rimmed baking dish.
  • In a small bowl, whisk together the olive oil, lemon juice, pressed garlic, 7 spice, paprika, salt, and black pepper until well combined.
  • Pour the sauce over the chicken and potatoes. Use your hands to toss everything together, ensuring the chicken and potatoes are evenly coated.
  • Arrange the chicken pieces skin-side up on top of the potatoes in the baking dish.
  • Bake in the preheated oven for 55 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
  • Remove from the oven and let the dish rest for 5 minutes before serving.
