Description

Cozy, hearty Mediterranean White Beans & Greens loaded with plant-based protein, savory herbs, and tender greens for a comforting meal.


Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1/2 teaspoon red pepper flakes (optional)

  • 2 cans (15 oz each) white beans, drained and rinsed

  • 2 cups vegetable broth

  • 1 tablespoon lemon juice

  • 5 cups chopped kale or collard greens

  • Salt and pepper to taste

  • Fresh parsley, for garnish


Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add diced onion and cook until softened, about 5 minutes.

  • Stir in garlic, thyme, oregano, and red pepper flakes; cook 1-2 minutes.

  • Add white beans and vegetable broth; simmer for 10 minutes.

  • Stir in lemon juice and chopped greens.

  • Cover and cook for 5-7 minutes until greens are tender.

  • Season with salt and pepper to taste.

 

  • Garnish with fresh parsley before serving.

Notes

  • Use spinach for a quicker-cooking green alternative.
  • Adjust red pepper flakes for desired spice level.
  • Tastes even better the next day as flavors develop!
