Cozy, hearty Mediterranean White Beans & Greens loaded with plant-based protein, savory herbs, and tender greens for a comforting meal.
Ingredients
2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
2 cans (15 oz each) white beans, drained and rinsed
2 cups vegetable broth
1 tablespoon lemon juice
5 cups chopped kale or collard greens
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until softened, about 5 minutes.
Stir in garlic, thyme, oregano, and red pepper flakes; cook 1-2 minutes.
Add white beans and vegetable broth; simmer for 10 minutes.
Stir in lemon juice and chopped greens.
Cover and cook for 5-7 minutes until greens are tender.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
