Creamy Marry Me Chicken Pasta with sun-dried tomatoes, tender chicken, and parmesan—romantic and ready in 30 minutes to steal the show!
Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
2 tablespoons olive oil
12 ounces penne pasta
2 tablespoons butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup heavy cream
½ cup grated parmesan cheese
½ cup sun-dried tomatoes, chopped
1 teaspoon paprika
1 teaspoon Italian seasoning
Fresh basil, chopped, for garnish
Instructions
Cook penne pasta per package instructions. Drain and set aside.
Season chicken with salt and pepper.
Heat olive oil in a skillet, cook chicken 6–8 minutes until done. Remove and set aside.
Melt butter in the same skillet. Sauté garlic for 30 seconds, then stir in flour to make a roux.
Whisk in chicken broth and heavy cream; stir until thickened.
Add parmesan, sun-dried tomatoes, paprika, and Italian seasoning. Mix well.
Return chicken to skillet, simmer briefly.
Add cooked pasta and toss to coat evenly.
Garnish with chopped basil and serve hot.
Notes
- Add a pinch of red pepper flakes for a little heat.
- Swap penne with rigatoni or fettuccine for a twist.
- Leftovers reheat well with a splash of cream or broth.
