Description
Succulent chicken stir-fried with earthy mushrooms, aromatic garlic, and ginger in a savory sauce. This quick and delicious dish is perfect for busy weeknights!

For the Chicken & Mushrooms:
- 3.5 oz (100g) mushrooms, sliced
- 10.5 oz (300g) chicken, thinly sliced
- 2 teaspoons ginger, minced
- 2–3 cloves garlic, minced
- 1 red chili pepper, sliced (optional for heat)
- 2 spring onions, chopped
For the Chicken Marinade:
- 1 tablespoon regular soy sauce
- 1 tablespoon cornstarch (or potato starch)
- 2 teaspoons cooking oil
- 1 teaspoon brown sugar (or white sugar)
For the Stir-Fry Sauce:
- 1 tablespoon regular soy sauce
- 1 teaspoon dark soy sauce
- 3 tablespoons oyster sauce
- 2 teaspoons sugar
- 1/2 teaspoon cornstarch
- 2 tablespoons water
Instructions
Marinate the Chicken:
- In a bowl, combine sliced chicken with soy sauce, cornstarch, cooking oil, and sugar.
- Mix well and let it marinate for 10-15 minutes.
2. Prepare the Stir-Fry Sauce:
- In a small bowl, mix regular soy sauce, dark soy sauce, oyster sauce, sugar, cornstarch, and water. Set aside.
3. Cook the Chicken:
- Heat a tablespoon of oil in a pan or wok over medium-high heat.
- Add the marinated chicken and stir-fry for 2-3 minutes until lightly golden. Remove from the pan and set aside.
4. Sauté the Aromatics & Mushrooms:
- In the same pan, add a bit more oil if needed.
- Sauté minced ginger and garlic for 30 seconds until fragrant.
- Add sliced mushrooms and cook for 2 minutes until softened.
5. Combine & Finish the Dish:
- Return the cooked chicken to the pan and stir everything together.
- Pour in the prepared stir-fry sauce, stirring well to coat the chicken and mushrooms evenly.
- Add sliced red chili pepper and chopped spring onions. Stir-fry for another 1-2 minutes until everything is well combined and the sauce thickens.
6. Serve & Enjoy:
- Transfer to a serving plate and enjoy with steamed rice or noodles.
Notes
- For extra umami, add a splash of sesame oil before serving.
- Use shiitake mushrooms for a richer flavor.
- Adjust spice levels by adding more or less chili pepper.
