Ingredients
For the Filling:
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1/4 cup all-purpose flour
2 cups chicken broth
1 cup whole milk
3 cups cooked, shredded chicken
1 cup frozen peas
1 teaspoon dried thyme
Salt and pepper, to taste
For the Biscuit Topping:
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons unsalted butter, cold and cubed
1/2 cup whole milk
Instructions
Prepare the Filling:
Preheat oven to 400°F (200°C).
Heat olive oil in a skillet over medium heat. Add diced onion and cook for 5 minutes until soft.
Stir in garlic, carrots, and celery. Cook an additional 5 minutes.
Sprinkle flour over the vegetables and cook for 1–2 minutes to form a roux.
Gradually whisk in chicken broth and milk. Simmer until the mixture thickens.
Add cooked chicken, peas, thyme, salt, and pepper. Stir to combine and remove from heat.
Pour the mixture into a 9×13-inch baking dish.
Make the Biscuit Topping:
In a mixing bowl, whisk together flour, baking powder, and salt.
Cut in cold butter until the mixture resembles coarse crumbs.
Stir in milk until a soft dough forms (do not overmix).
Assemble and Bake:
Drop spoonfuls of biscuit dough evenly over the chicken mixture.
Bake for 25–30 minutes or until the biscuits are golden brown and fully cooked through.
Let rest for 5 minutes before serving.
