These Glazed Blueberry Butter Swim Biscuits are a delightful twist on traditional biscuits, combining the rich flavors of butter and fresh blueberries with a sweet glaze. They’re perfect for breakfast, brunch, or a sweet snack.
Ingredients
Biscuits:
½ cup (1 stick) unsalted butter
2½ cups all-purpose flour
¼ cup granulated sugar
1 tbsp aluminum-free baking powder
½ tsp salt
1¾ cups buttermilk (plus more if needed)
1½ cups fresh blueberries
Glaze:
1 cup powdered sugar
2–3 tbsp milk
Instructions
Preheat Oven:
Preheat to 450°F (230°C). Grease a 9×9-inch baking dish.
Melt Butter:
Melt butter and pour into the bottom of the baking dish.
Make Dough:
In a bowl, whisk flour, sugar, baking powder, and salt.
Add buttermilk and stir until sticky dough forms. Adjust with extra buttermilk if too dry.
Add Blueberries:
Gently fold in fresh blueberries.
Bake:
Spread dough evenly over melted butter.
Score into 9 squares with a knife.
Bake for 25–30 minutes until golden on top.
Make & Add Glaze:
Mix powdered sugar with milk until smooth.
Drizzle over warm biscuits.
Serve:
Cool slightly, then enjoy warm.
Notes
- Frozen blueberries can be used—toss them in a little flour before folding into dough.
- Avoid overmixing to keep biscuits tender.
- Store leftovers covered at room temp for 1–2 days.
