- 1.5 lbs baby Yukon Gold or red potatoes, halved
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- ⅓ cup grated Parmesan cheese
- 3 tbsp olive oil
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
- Season Chicken: Mix 1 tbsp olive oil with half the minced garlic, Italian seasoning, smoked paprika, salt, and pepper. Rub this evenly over the chicken.
- Prepare Potatoes: In a large bowl, toss the halved potatoes with 2 tbsp olive oil, the remaining garlic, Parmesan cheese, salt, and pepper.
- Arrange on Pan: Place the seasoned chicken on one side of the baking sheet and spread the potatoes evenly on the other side.
- Bake: Roast for 25-30 minutes, flipping potatoes halfway through. Ensure the chicken reaches an internal temp of 165°F (74°C).
- Garnish & Serve: Sprinkle extra Parmesan cheese over the dish in the last 5 minutes of baking for a golden crust. Garnish with parsley and serve hot.
