Description

Garlic Butter Shrimp Scampi Lasagna layers tender noodles, juicy shrimp, garlic butter, and creamy sauce for a rich, indulgent seafood twist!

For the Lasagna Layers:

  • 9 sheets of pre-cooked lasagna
  • 1 lb (450g) shrimp, peeled & deveined
  • 4 cloves garlic, minced
  • ½ cup (100g) butter
  • 2 cups (200g) grated mozzarella

For the Creamy Scampi Sauce:

  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (optional)
  • 1 ½ cups heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 cup chicken or seafood broth
  • 1 teaspoon Italian seasoning
  • Juice of 1 lemon
  • Salt & black pepper, to taste

Instructions

  • Prepare the Shrimp:
    • In a large skillet, melt butter over medium heat.
    • Add minced garlic and sauté until fragrant (about 1 minute).
    • Add shrimp and cook until pink and opaque (2-3 minutes per side).
    • Remove shrimp from the skillet and set aside.
  • Make the Creamy Scampi Sauce:
    • In the same skillet, add olive oil and red pepper flakes (if using).
    • Pour in heavy cream and stir to combine.
    • Add Parmesan cheese, broth, Italian seasoning, lemon juice, salt, and pepper.
    • Simmer for about 5 minutes until sauce thickens slightly.
  • Assemble the Lasagna:
    • Preheat oven to 375°F (190°C).
    • Grease a baking dish and spread a thin layer of scampi sauce.
    • Place three lasagna sheets over the sauce.
    • Layer with a third of the shrimp, a third of the sauce, and a third of the mozzarella.
    • Repeat the layers twice more, ending with mozzarella on top.
  • Bake:
    • Cover with aluminum foil and bake for 25 minutes.
    • Remove foil and bake for an additional 10-15 minutes until cheese is golden and bubbly.
    • Let rest for 10 minutes before serving.
