For the Lasagna Layers:
- 9 sheets of pre-cooked lasagna
- 1 lb (450g) shrimp, peeled & deveined
- 4 cloves garlic, minced
- ½ cup (100g) butter
- 2 cups (200g) grated mozzarella
For the Creamy Scampi Sauce:
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes (optional)
- 1 ½ cups heavy cream
- ½ cup Parmesan cheese, grated
- 1 cup chicken or seafood broth
- 1 teaspoon Italian seasoning
- Juice of 1 lemon
- Salt & black pepper, to taste
Instructions
- Prepare the Shrimp:
- In a large skillet, melt butter over medium heat.
- Add minced garlic and sauté until fragrant (about 1 minute).
- Add shrimp and cook until pink and opaque (2-3 minutes per side).
- Remove shrimp from the skillet and set aside.
- Make the Creamy Scampi Sauce:
- In the same skillet, add olive oil and red pepper flakes (if using).
- Pour in heavy cream and stir to combine.
- Add Parmesan cheese, broth, Italian seasoning, lemon juice, salt, and pepper.
- Simmer for about 5 minutes until sauce thickens slightly.
- Assemble the Lasagna:
- Preheat oven to 375°F (190°C).
- Grease a baking dish and spread a thin layer of scampi sauce.
- Place three lasagna sheets over the sauce.
- Layer with a third of the shrimp, a third of the sauce, and a third of the mozzarella.
- Repeat the layers twice more, ending with mozzarella on top.
- Bake:
- Cover with aluminum foil and bake for 25 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese is golden and bubbly.
- Let rest for 10 minutes before serving.

- Can be made ahead and refrigerated before baking.
