Description
These Garlic Butter Roasted Potatoes are tossed in rich garlic butter and roasted until golden—crispy outside, fluffy and buttery inside.
Ingredients
2 lbs (900g) Maris Piper, King Edward, Agria, or Yukon Gold potatoes
2 tbsp salt (for boiling)
¼ cup unsalted butter
4 cloves garlic, minced
1 tbsp lemon juice
½ tsp salt (adjust to taste)
1 tbsp fresh parsley, finely chopped
Optional: ½ tsp fish sauce for umami boost
Instructions
Prep Potatoes:
Preheat oven to 400°F (200°C).
Peel and cut potatoes into large chunks.
Boil:
Place potatoes in a pot with cold water and 2 tbsp salt.
Bring to a boil and cook 10–15 minutes until fork-tender.
Make Garlic Butter Sauce:
Melt butter in a saucepan.
Sauté garlic 1–2 minutes until fragrant.
Stir in lemon juice, salt, parsley, and fish sauce (if using).
Coat & Roast:
Drain potatoes, return to pot, and toss to roughen edges.
Add garlic butter sauce and coat evenly.
Spread on a lined baking sheet and roast 30–35 minutes, turning halfway.
Serve:
Let cool slightly. Serve warm as a delicious side.
