Garlic Butter Roasted Potatoes

Description

These Garlic Butter Roasted Potatoes are tossed in rich garlic butter and roasted until golden—crispy outside, fluffy and buttery inside.


Ingredients

Scale
  • 2 lbs (900g) Maris Piper, King Edward, Agria, or Yukon Gold potatoes

  • 2 tbsp salt (for boiling)

  • ¼ cup unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp lemon juice

  • ½ tsp salt (adjust to taste)

  • 1 tbsp fresh parsley, finely chopped

  • Optional: ½ tsp fish sauce for umami boost


Instructions

  • Prep Potatoes:

    • Preheat oven to 400°F (200°C).

    • Peel and cut potatoes into large chunks.

  • Boil:

    • Place potatoes in a pot with cold water and 2 tbsp salt.

    • Bring to a boil and cook 10–15 minutes until fork-tender.

  • Make Garlic Butter Sauce:

    • Melt butter in a saucepan.

    • Sauté garlic 1–2 minutes until fragrant.

    • Stir in lemon juice, salt, parsley, and fish sauce (if using).

  • Coat & Roast:

    • Drain potatoes, return to pot, and toss to roughen edges.

    • Add garlic butter sauce and coat evenly.

    • Spread on a lined baking sheet and roast 30–35 minutes, turning halfway.

 

  • Serve:

    • Let cool slightly. Serve warm as a delicious side.

  • Tossing the potatoes to roughen them creates extra crispiness.
  • Fish sauce is optional but adds a rich savory depth.
