- 4 salmon fillets
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Italian seasoning
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season salmon with salt, black pepper, and smoked paprika.
- Sear salmon for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
- Add cherry tomatoes, cooking for 2 minutes until softened.
- Stir in spinach and cook until wilted (1-2 minutes).
- Pour in heavy cream and stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2-3 minutes until thickened.
- Return salmon to skillet, spooning sauce over the fillets. Cook for 2 more minutes.
- Squeeze lemon juice over the top and garnish with fresh parsley before serving.
Notes
- For extra richness, substitute heavy cream with half-and-half.
- Add mushrooms for more texture and depth.
- Serve with mashed potatoes, rice, or crusty bread.
