Funfetti Ice Cream is a festive frozen treat blending creamy vanilla ice cream with Funfetti cake flavors, perfect for any celebration.

For the cake layer:
- 1 box Funfetti cake mix
- 3 large eggs
- ½ cup vegetable oil
- 1 cup water
For the ice cream layer:
- 1 ½ quarts vanilla ice cream, softened
- ½ cup rainbow sprinkles
For the topping:
- 1 cup whipped cream
- ½ cup white chocolate chips, melted
- Extra sprinkles for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a bundt pan.
- Prepare the Funfetti cake batter according to the package instructions by mixing the cake mix, eggs, oil, and water.
- Pour the batter into the prepared bundt pan and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool completely, then carefully slice it in half horizontally.
- Line a clean bundt pan with plastic wrap. Place the bottom half of the cake back into the pan.
- In a bowl, mix the softened vanilla ice cream with the rainbow sprinkles.
- Spread the ice cream evenly over the cake layer, then place the top half of the cake over the ice cream. Press gently to ensure it molds together.
- Cover with plastic wrap and freeze for at least 4 hours or until firm.
- Once frozen, invert the bundt cake onto a serving plate. Drizzle with melted white chocolate, pipe whipped cream on top, and sprinkle with extra sprinkles.
- Slice and serve immediately for a fun, cold, and colorful treat!
