No-bake Fruity Pebbles cheesecake with buttery marshmallow crust and creamy, dreamy filling—colorful, festive, kid-friendly, and easy to make!
Ingredients
Crust:
3 ½ cups Fruity Pebbles cereal
3 cups mini marshmallows
2 tablespoons unsalted butter
Filling:
16 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
7 oz marshmallow creme
1 ½ cups Fruity Pebbles cereal, lightly chopped
Instructions
In a large microwave-safe bowl, combine Fruity Pebbles, marshmallows, and butter. Microwave on high for 2–3 minutes until melted and puffed.
Stir until cereal is fully coated, then press mixture into a greased pie plate, forming the crust up the sides.
In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add marshmallow creme and mix until combined.
Gently fold in the chopped Fruity Pebbles.
Spread the filling over the crust and smooth the top.
Chill in the refrigerator for 1–2 hours, or freeze for 30 minutes to set faster.
Garnish with additional cereal before serving if desired.
