  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese

Instructions

  • Preheat & Prep:

    • Preheat the oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish.
  • Sauté the Onions & Garlic:

    • Heat olive oil in a large skillet over medium heat.
    • Add sliced onion and sauté for 5 minutes until soft.
    • Add minced garlic and cook for 1 more minute until fragrant.
  • Brown the Beef:

    • Add ground beef to the skillet, breaking it apart with a spatula.
    • Cook until browned (5-7 minutes), then drain any excess fat.
  • Mix in the Liquids & Rice:

    • Stir in French onion soup, diced tomatoes (with juice), beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
    • Bring to a simmer. Add uncooked rice and mix well.
  • Bake the Casserole:

    • Transfer mixture to the prepared baking dish.
    • Cover tightly with aluminum foil and bake for 30 minutes.
  • Add the Cheese & Finish Baking:

    • After 30 minutes, remove the foil.
    • Sprinkle shredded Swiss cheese evenly on top.
    • Bake uncovered for 10-15 more minutes until cheese is melted and bubbly.
  • Cool & Serve:

    • Let the casserole rest for 5 minutes before serving.
