- 1 pound ground beef
- 1 cup long-grain white rice
- 1 can (10.5 oz) French onion soup
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded Swiss cheese
Instructions
Preheat & Prep:
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
Sauté the Onions & Garlic:
- Heat olive oil in a large skillet over medium heat.
- Add sliced onion and sauté for 5 minutes until soft.
- Add minced garlic and cook for 1 more minute until fragrant.
Brown the Beef:
- Add ground beef to the skillet, breaking it apart with a spatula.
- Cook until browned (5-7 minutes), then drain any excess fat.
Mix in the Liquids & Rice:
- Stir in French onion soup, diced tomatoes (with juice), beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
- Bring to a simmer. Add uncooked rice and mix well.
Bake the Casserole:
- Transfer mixture to the prepared baking dish.
- Cover tightly with aluminum foil and bake for 30 minutes.
Add the Cheese & Finish Baking:
- After 30 minutes, remove the foil.
- Sprinkle shredded Swiss cheese evenly on top.
- Bake uncovered for 10-15 more minutes until cheese is melted and bubbly.
Cool & Serve:
- Let the casserole rest for 5 minutes before serving.
