Pinch of salt
For Topping:
Assorted fresh fruits (e.g., strawberries, blueberries, kiwis, mandarin oranges), chopped into small pieces
Instructions
- Prepare the Sugar Cookie Base:
- Preheat the oven according to the sugar cookie dough package or recipe instructions.
- Roll out the sugar cookie dough to about ¼-inch thickness on a lightly floured surface.
- Use an egg-shaped cookie cutter to cut out cookies and place them on a baking sheet lined with parchment paper.
- Bake according to the package or recipe directions until lightly golden.
- Remove from the oven and allow cookies to cool completely on a wire rack.
- Make the Cream Cheese Frosting:
- In a large bowl, beat together the softened cream cheese and butter until light and fluffy.
- Add the vanilla extract and a pinch of salt, mixing well.
- Gradually add the confectioner’s sugar, beating until the frosting is smooth and creamy.
- Assemble the Fruit Pizzas:
- Once the cookies are completely cooled, spread a generous layer of cream cheese frosting over each one.
- Decorate with chopped fresh fruits, arranging them creatively to resemble decorated Easter eggs.
- Serve immediately. If making ahead, add the fruit toppings just before serving to prevent the cookies from becoming soggy.
