- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups buttermilk pancake mix

Instructions
- Freeze marshmallows for at least 30 minutes.
- Heat 3-4 inches of vegetable oil in a deep fryer or pot to 375°F (190°C).
- Whisk together milk, egg, and vanilla in a small bowl.
- Place pancake mix in a large bowl, make a well, and add wet ingredients. Mix until just combined.
- Dip frozen marshmallows in batter, coating completely.
- Fry in hot oil, 4-5 at a time, for 25-30 seconds per side until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm with powdered sugar or chocolate drizzle.
