Description

Ingredients

  • 1 package large marshmallows
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups buttermilk pancake mix
  • Vegetable oil, for frying

Instructions

  • Freeze marshmallows for at least 30 minutes.
  • Heat 3-4 inches of vegetable oil in a deep fryer or pot to 375°F (190°C).
  • Whisk together milk, egg, and vanilla in a small bowl.
  • Place pancake mix in a large bowl, make a well, and add wet ingredients. Mix until just combined.
  • Dip frozen marshmallows in batter, coating completely.
  • Fry in hot oil, 4-5 at a time, for 25-30 seconds per side until golden brown.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve warm with powdered sugar or chocolate drizzle.
