  • ¼ cup brown sugar (55g)

  • ½ tsp ground cinnamon

  • 6 tbsp unsalted butter, melted (85g)

For the Cinnamon Swirl:

  • 1 cup brown sugar (220g)

  • ⅓ cup all-purpose flour (39g)

  • 1 tbsp ground cinnamon

  • ⅓ cup unsalted butter, melted (76g)

For the Cheesecake Batter:

  • 32 oz cream cheese, softened (907g)

  • 1 cup brown sugar (220g)

  • ¼ cup granulated sugar (50g)

  • ½ cup sour cream (120g)

  • 4 large eggs, room temperature

  • 1 tbsp vanilla extract

  • ½ tsp salt

For the Cream Cheese Frosting:

  • 6 tbsp cream cheese, softened (85g)

  • 1 cup powdered sugar (125g)

  • 1 tsp vanilla extract

  • 1 cup heavy whipping cream (240ml)

  • 12 tsp ground cinnamon, for garnish

Instructions

  • Make the Crust:
Preheat oven to 325°F (163°C). Mix graham crumbs, brown sugar, and cinnamon. Add melted butter, stir, and press into 9-inch springform pan. Bake for 10 mins; cool.

  • Make the Cinnamon Swirl:
Mix brown sugar, flour, cinnamon, and melted butter until smooth. Set aside.

  • Make the Cheesecake Batter:
Beat cream cheese until smooth. Add sugars, mix well. Add sour cream, then eggs one at a time. Stir in vanilla and salt.

  • Assemble:
Layer ⅓ of batter into crust, drizzle with ⅓ cinnamon swirl. Repeat layers twice, ending with swirl on top. Swirl gently with knife.

  • Bake:
Wrap pan in foil. Place in water bath and bake 55–65 mins until center is set but jiggles slightly. Cool in oven for 1 hour, then chill for 6+ hours.

  • Make the Frosting:
Beat cream cheese, powdered sugar, and vanilla until smooth. Whip cream to stiff peaks; fold into cheese mixture until fluffy.

  • Serve:
Unmold cheesecake, frost the top, sprinkle with cinnamon, slice, and enjoy.
