- 3–4 large sweet onions, sliced
- 4 tablespoons salted butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 pound ground beef
- 1 cup breadcrumbs
- ¼ cup milk
- 1 large egg
- 1 cup shredded Swiss cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Caramelize the Onions: Melt butter in a skillet over medium heat. Add sliced onions and salt. Cook, stirring occasionally, until caramelized, about 15-20 minutes.
- Mix the Meatloaf: In a bowl, combine ground beef, breadcrumbs, milk, egg, black pepper, garlic powder, and onion powder. Mix well.
- Shape the Meatloaf: Form the mixture into a loaf and place it in the crockpot.
- Top with Onions: Spread caramelized onions over the meatloaf.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 160°F (70°C).
- Add Cheese: Sprinkle Swiss cheese on top 15 minutes before serving, then cover to melt.
- Rest and Slice: Carefully lift the meatloaf from the crockpot and let it rest before slicing.
- Serve: Garnish with fresh parsley and enjoy!
