Ingredients
2 medium zucchini
2 tbsp olive oil
½ cup grated Parmesan cheese
½ tsp garlic powder
½ tsp Italian seasoning
Salt and pepper, to taste
Instructions
Prep Oven & Baking Sheet:
Preheat oven to 425°F (218°C).
Line a baking sheet with parchment paper or lightly grease it.
Slice & Season Zucchini:
Slice zucchini into ¼-inch thick rounds.
In a bowl, toss zucchini slices with olive oil to coat evenly.
Coat with Parmesan Mixture:
In a separate bowl, mix together Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
Press one side of each zucchini round into the cheese mixture.
Bake:
Place coated zucchini slices on the baking sheet in a single layer, cheese side up.
Bake for 20–25 minutes, or until the cheese is golden and zucchini is tender.
Serve:
Serve warm with optional dips like marinara or ranch.
