For the Cake:

  • 8 oz cream cheese, softened
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt

For the Glaze (optional):

  • ¼ cup powdered sugar
  • 12 tbsp milk or cream

Instructions

  • Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch springform pan.
  • In a large mixing bowl, beat the softened cream cheese until creamy and smooth. Gradually add sugar, mixing until fully combined.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture, mixing just until no dry streaks remain. Be careful not to overmix.
  • Pour the batter evenly into the prepared pan. Smooth the top with a spatula and bake for 30-35 minutes, or until a skewer inserted in the center comes out clean.
  • Allow the cake to cool in the pan on a wire rack. Once completely cool, remove the sides of the springform pan.
  • For the optional glaze, whisk together powdered sugar and milk or cream until smooth. Drizzle over the cooled cake before serving.
