For the Cake:
- 8 oz cream cheese, softened
- ½ cup vegetable oil
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
For the Glaze (optional):
- ¼ cup powdered sugar
- 1–2 tbsp milk or cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese until creamy and smooth. Gradually add sugar, mixing until fully combined.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture, mixing just until no dry streaks remain. Be careful not to overmix.
- Pour the batter evenly into the prepared pan. Smooth the top with a spatula and bake for 30-35 minutes, or until a skewer inserted in the center comes out clean.
- Allow the cake to cool in the pan on a wire rack. Once completely cool, remove the sides of the springform pan.
- For the optional glaze, whisk together powdered sugar and milk or cream until smooth. Drizzle over the cooled cake before serving.
