  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 (8 oz) package cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped parsley for garnish

Instructions

  • Cook the pasta: Boil penne pasta according to package instructions until al dente. Drain and set aside.
  • Cook the chicken: In a large skillet, heat olive oil over medium heat. Add chicken, salt, pepper, garlic powder, onion powder, and smoked paprika. Cook for 5–7 minutes until golden and fully cooked. Remove from the skillet and set aside.
  • Make the sauce: In the same skillet, add chicken broth, heavy cream, and cream cheese. Stir until smooth and creamy.
  • Add cheese and seasoning: Mix in the ranch seasoning, cheddar cheese, and Parmesan cheese. Stir until melted and well combined.
  • Combine everything: Return the cooked chicken to the skillet along with the cooked penne pasta. Stir to coat everything in the sauce.

 

  • Finish and serve: Cook for another 2 minutes until heated through. Garnish with fresh parsley and serve hot.

Notes

  • Use rotisserie chicken for a quicker version.
  • Can be made with different pasta shapes like rigatoni or fusilli.
