Cottage Cheese Sweet Potato Beef Bowl

Description

Roasted sweet potatoes, spiced ground beef, creamy cottage cheese, and avocado topped with sweet-spicy hot honey. Hearty, nutritious!


Ingredients

  • 400g lean ground beef

  • 1 packet taco seasoning

  • 2 medium sweet potatoes

  • 2 cups cottage cheese

  • 1 avocado, sliced

  • 12 tbsp hot honey

  • Optional: hot sauce, salt, black pepper


Instructions

  • Cook the Beef:

    • In a skillet over medium heat, cook ground beef until browned.

    • Add taco seasoning and mix well. Set aside.

  • Prepare Sweet Potatoes:

    • Roast or air fry at 400°F (200°C) for ~10 minutes until fork-tender.

    • Lightly spray with avocado oil and season as desired.

  • Assemble Bowls:

    • In each bowl, layer roasted sweet potatoes, a scoop of cottage cheese, seasoned beef, and sliced avocado.

 

  • Add Toppings:

    • Drizzle hot honey and optional hot sauce over top.

    • Season with salt and black pepper to taste.
