Ingredients
400g lean ground beef
1 packet taco seasoning
2 medium sweet potatoes
2 cups cottage cheese
1 avocado, sliced
1–2 tbsp hot honey
Optional: hot sauce, salt, black pepper
Instructions
Cook the Beef:
In a skillet over medium heat, cook ground beef until browned.
Add taco seasoning and mix well. Set aside.
Prepare Sweet Potatoes:
Roast or air fry at 400°F (200°C) for ~10 minutes until fork-tender.
Lightly spray with avocado oil and season as desired.
Assemble Bowls:
In each bowl, layer roasted sweet potatoes, a scoop of cottage cheese, seasoned beef, and sliced avocado.
Add Toppings:
Drizzle hot honey and optional hot sauce over top.
Season with salt and black pepper to taste.
