Delicious homemade coffee cookies recipe – crispy on the outside, soft on the inside, with a rich coffee flavor. Perfect for a sweet caffeine kick!
Ingredients
2 cups all-purpose flour, spooned and leveled
1/3 cup espresso powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
3/4 cup (12 tablespoons) salted sweet cream butter, softened
2/3 cup dark brown sugar
1/3 cup granulated sugar
1 extra-large egg, room temperature
1 extra-large egg yolk, room temperature
1 1/2 teaspoons pure vanilla extract
1 (12-ounce) package semi-sweet chocolate chunks
1 cup dark chocolate chips
Instructions
In a medium bowl, whisk together flour, espresso powder, baking soda, baking powder, and salt. Set aside.
In a large bowl, cream together softened butter, dark brown sugar, and granulated sugar until light and fluffy.
Add the egg, egg yolk, and vanilla extract to the butter mixture, beating until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the semi-sweet chocolate chunks and dark chocolate chips.
Cover the dough and refrigerate for at least 30 minutes.
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Scoop chilled dough onto prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden and centers are still slightly soft.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
