Description

3 extra-large eggs, at room temperature

¼ teaspoon cream of tartar

3 tablespoons (1.5 oz) cream cheese, softened (or 3 tablespoons Greek yogurt)

⅛ teaspoon kosher salt (optional)


Instructions

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two clean, medium-sized glass bowls. Ensure no yolk contaminates the whites.
  3. Add the cream of tartar to the egg whites. Using an electric hand mixer, whip on high speed until stiff peaks form, approximately 3 minutes. Set aside.
  4. In the other bowl, whisk together the egg yolks, softened cream cheese, and kosher salt until completely smooth, with no visible lumps.
  5. Gently fold the whipped egg whites into the yolk mixture, one cup at a time, using a silicone spatula. Continue folding until fully incorporated.
  6. Spoon the mixture into 6 equal mounds on the prepared baking sheet, spacing them 3-4 inches apart.
  7. Bake for 25 to 30 minutes, until the breads are golden brown.
  8. Allow the cloud breads to cool on the baking sheet for 5-10 minutes before serving.
