3 extra-large eggs, at room temperature
¼ teaspoon cream of tartar
3 tablespoons (1.5 oz) cream cheese, softened (or 3 tablespoons Greek yogurt)
⅛ teaspoon kosher salt (optional)
Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the egg whites and yolks into two clean, medium-sized glass bowls. Ensure no yolk contaminates the whites.
- Add the cream of tartar to the egg whites. Using an electric hand mixer, whip on high speed until stiff peaks form, approximately 3 minutes. Set aside.
- In the other bowl, whisk together the egg yolks, softened cream cheese, and kosher salt until completely smooth, with no visible lumps.
- Gently fold the whipped egg whites into the yolk mixture, one cup at a time, using a silicone spatula. Continue folding until fully incorporated.
- Spoon the mixture into 6 equal mounds on the prepared baking sheet, spacing them 3-4 inches apart.
- Bake for 25 to 30 minutes, until the breads are golden brown.
- Allow the cloud breads to cool on the baking sheet for 5-10 minutes before serving.
