  • 1/2 tsp vanilla extract
  • 1 tbsp (15g) melted butter, plus extra for cooking

For the whipped cream:

  • 1 cup (240ml) heavy whipping cream, chilled
  • 2 tbsp (25g) powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  • In a bowl, whisk together flour, cocoa powder, sugar, and salt.
  • In another bowl, mix eggs, milk, and vanilla extract.
  • Gradually add wet ingredients to dry, whisking until smooth.
  • Stir in melted butter and let the batter rest for 30 minutes.
  • Heat a non-stick pan over medium heat, lightly greasing with butter.
  • Pour 1/4 cup of batter into the pan, swirling to spread evenly.
  • Cook for 1-2 minutes until edges lift slightly, then flip and cook for another 30 seconds.
  • Repeat with remaining batter, stacking crepes on a plate.
  • Beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  • Fill each crepe with whipped cream, fold or roll, and serve immediately.
