- 4 boneless, skinless chicken breasts, cut into chunks
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chili powder (optional)
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, coriander, oregano, salt, black pepper, and chili powder.
- Add chicken chunks to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
- If using wooden skewers, soak them in water for 20 minutes.
- Preheat grill to medium-high heat.
- Thread chicken, bell peppers, and onion onto skewers, alternating pieces.
- Grill for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Serve hot with salad, rice, or warm pita bread.
Notes
- For extra flavor, marinate overnight.
- Can be baked at 400°F (200°C) for 20-25 minutes if no grill is available.
- Add zucchini or cherry tomatoes for variety.
