Description

Juicy, flavorful chicken kebabs marinated in spices and grilled to perfection—perfect for barbecues, family gatherings, or weeknight meals!


Ingredients

  • 4 boneless, skinless chicken breasts, cut into chunks
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder (optional)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

Instructions

  • In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, coriander, oregano, salt, black pepper, and chili powder.
  • Add chicken chunks to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
  • If using wooden skewers, soak them in water for 20 minutes.
  • Preheat grill to medium-high heat.
  • Thread chicken, bell peppers, and onion onto skewers, alternating pieces.
  • Grill for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  • Serve hot with salad, rice, or warm pita bread.

Notes

  • For extra flavor, marinate overnight.
  • Can be baked at 400°F (200°C) for 20-25 minutes if no grill is available.
  • Add zucchini or cherry tomatoes for variety.
