- 4 boneless, skinless chicken breasts (or thighs)
- 4 medium potatoes, diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
- 1 cup shredded cheddar cheese (optional)
- ¼ cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper for easy cleanup.
- In a large bowl, combine the diced potatoes with 1 tablespoon of olive oil, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon smoked paprika, ½ teaspoon dried oregano, ¼ teaspoon dried thyme, salt, and pepper. Toss to coat evenly.
- Spread the seasoned potatoes in an even layer in the prepared baking dish. Bake in the preheated oven for 20 minutes.
- While the potatoes are baking, season the chicken breasts with the remaining olive oil, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, and pepper.
- After 20 minutes, remove the baking dish from the oven and place the seasoned chicken on top of the partially cooked potatoes. Return to the oven and continue baking for an additional 25–30 minutes, or until the chicken is cooked through and the potatoes are tender.
- If using, sprinkle the shredded cheddar cheese over the chicken and potatoes during the last 5 minutes of baking, allowing it to melt.
- Once done, remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
