Description

Cheesy Spaghetti Squash Gratin is a creamy, comforting side dish with roasted squash, melty cheddar, and golden Parmesan, perfect for low-carb comfort food lovers!


Ingredients

  • 1 medium spaghetti squash

  • 2 tablespoons butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese, divided

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon paprika

  • 2 tablespoons grated Parmesan cheese


Instructions

  • Preheat oven to 375°F (190°C).

  • Cut spaghetti squash in half, remove seeds.

  • Place halves cut side down on a baking sheet; roast for 35-40 minutes until tender.

  • Let squash cool slightly; scrape flesh into strands.

  • In a skillet, melt butter and sauté onion and garlic until softened.

  • Stir onion and garlic into spaghetti squash strands.

  • Mix in sour cream, half the cheddar cheese, salt, pepper, and paprika.

  • Transfer to a greased baking dish.

  • Top with remaining cheddar cheese and Parmesan.

  • Bake 20–25 minutes until golden and bubbling.

 

  • Serve warm.
