Ingredients
1 medium cauliflower
6 eggs, separated
6 tbsp olive oil
1 cup superfine almond flour
1/4 cup grated Parmesan cheese
1 tbsp baking powder
3/4 tsp salt
Instructions
Preheat oven to 350°F and line a 9×5 inch loaf pan with parchment paper.
Chop cauliflower into florets and pulse in a food processor until finely riced (about 3 cups). Squeeze out excess moisture using a cheesecloth.
Beat egg whites with a hand mixer until stiff peaks form.
In a separate bowl, whisk egg yolks with olive oil, then mix in almond flour, Parmesan, baking powder, salt, and riced cauliflower.
Gently fold in the egg whites in thirds until just combined.
Transfer batter to loaf pan, top with extra Parmesan if desired, and bake for 45–50 minutes.
Cool in pan for 5 minutes before transferring to a wire rack. Slice when fully cooled.
Notes
- Make sure cauliflower is dry to avoid sogginess.
- For dairy-free, sub Parmesan with nutritional yeast.
- Store in fridge or freeze slices between parchment for easy toasting.
