- ½ cup quick oats
- ½ cup granulated sugar
- ¼ cup unsalted butter
- ¼ cup milk
- ¼ teaspoon salt
- 1 tablespoon lemon zest
- ¼ cup fresh lemon juice
- ½ teaspoon vanilla extract
- ¼ cup white chocolate chips (optional)
Instructions
- In a medium saucepan over medium heat, combine the butter, sugar, milk, and salt. Stir continuously until the mixture comes to a gentle boil. Let it boil for 1 minute, stirring constantly.
- Remove the saucepan from heat and stir in the lemon juice, lemon zest, and vanilla extract.
- Add the quick oats to the mixture and stir until fully combined. If using white chocolate chips, fold them in at this stage.
- Drop spoonfuls of the mixture onto parchment paper or a silicone baking mat. Flatten slightly with a spoon if you prefer a thinner cookie.
- Allow the cookies to set at room temperature for about 30 minutes, or until firm. For faster setting, refrigerate for 15–20 minutes.
Notes
- For a more intense lemon flavor, increase the zest slightly.
- White chocolate chips add extra sweetness, but you can omit them for a tangier cookie.
