Description

Buffalo Chicken Roll-Ups are a crispy, spicy delight! Packed with shredded buffalo chicken and creamy dressing, they’re the perfect appetizer or snack.


Ingredients

  • ½ cup quick oats
  • ½ cup granulated sugar
  • ¼ cup unsalted butter
  • ¼ cup milk
  • ¼ teaspoon salt
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • ½ teaspoon vanilla extract
  • ¼ cup white chocolate chips (optional)

Instructions

  • In a medium saucepan over medium heat, combine the butter, sugar, milk, and salt. Stir continuously until the mixture comes to a gentle boil. Let it boil for 1 minute, stirring constantly.
  • Remove the saucepan from heat and stir in the lemon juice, lemon zest, and vanilla extract.
  • Add the quick oats to the mixture and stir until fully combined. If using white chocolate chips, fold them in at this stage.
  • Drop spoonfuls of the mixture onto parchment paper or a silicone baking mat. Flatten slightly with a spoon if you prefer a thinner cookie.
  • Allow the cookies to set at room temperature for about 30 minutes, or until firm. For faster setting, refrigerate for 15–20 minutes.

Notes

  • For a more intense lemon flavor, increase the zest slightly.
  • White chocolate chips add extra sweetness, but you can omit them for a tangier cookie.
  • Store in an airtight container for up to 3 days.
