Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted coconut oil (or vegetable oil)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup almond milk (or any milk)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  • In a large bowl, whisk together mashed bananas, melted coconut oil, granulated sugar, brown sugar, vanilla extract, and almond milk until well combined.
  • In a separate bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
