- 2 ripe bananas, mashed
- 1/3 cup melted coconut oil (or vegetable oil)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons vanilla extract
- 1/2 cup almond milk (or any milk)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together mashed bananas, melted coconut oil, granulated sugar, brown sugar, vanilla extract, and almond milk until well combined.
- In a separate bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy!
