Description
Enjoy a nostalgic Big Boy Fresh Strawberry Pie! Juicy strawberries in a glossy glaze over a flaky crust—just like the classic from Frisch’s Big Boy.
Ingredients
Scale
- 1 frozen pie crust (deep dish, if available)
- 1 1/4 cups water
- 1 1/4 cups granulated sugar
- 3 tablespoons cornstarch
- 3 tablespoons strawberry-flavored gelatin powder
- 2 cups fresh strawberries, hulled and halved
- Whipped cream, for garnish (optional)
Instructions
Prepare the Pie Crust:
- Preheat oven according to the pie crust package instructions.
- Prick the bottom and sides of the frozen crust with a fork to prevent bubbling.
- Bake as directed until golden brown, then cool completely.
Make the Strawberry Glaze:
- In a medium saucepan, whisk together water, sugar, and cornstarch until dissolved.
- Bring to a boil over medium heat, stirring constantly.
- Cook until thickened and translucent (about 2-3 minutes).
- Remove from heat and whisk in strawberry gelatin until fully dissolved. Let cool to room temperature, stirring occasionally.
Assemble the Pie:
- Arrange halved strawberries evenly in the cooled crust.
- Pour the cooled gelatin mixture over the strawberries, ensuring an even coat.
Chill the Pie:
- Refrigerate for at least 4 hours until the filling is set.
Serve:
- Slice and serve with a dollop of whipped cream, if desired.
Notes
- Use ripe, fresh strawberries for the best flavor.
- For extra richness, try a homemade pie crust.
- Stir the glaze occasionally while cooling to prevent a skin from forming.
