For the Cobbler Base:

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar

  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup melted butter

For the Batter:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1/4 cup honey or maple syrup

For the Topping:

  • 1/2 cup chopped pecans (optional)
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • In a bowl, mix mashed bananas, sugars, vanilla, cinnamon, nutmeg, salt, milk, and melted butter. Pour into the baking dish.
  • In another bowl, whisk flour, baking powder, baking soda, and salt.
  • Stir in milk, melted butter, and honey (or maple syrup) until smooth.
  • Pour batter over the banana mixture without stirring.
  • Combine pecans, brown sugar, and cinnamon, then sprinkle over the top.
  • Bake for 40-45 minutes until golden and bubbling.
  • Let cool slightly before serving warm with ice cream or whipped cream.

Notes
